Processed Cheese

I have no idea why, but whilst making my cheesy beans on toast for lunch I got to wondering why it's called "processed" cheese. What "process" has it been through that makes it different to normal cheese.

Cook's Thesaurus and hyperdictionary define processed cheese as "made by blending several lots of cheese" ... "gums and stabilizers that improve shelf life but compromise flavor and texture".

The Dairygold website describes in more detail the process of blending and pasteurising.

And finally, the NC State University site has a page about the science behind the processing.

I need to get out more often I feel.
